Fine Dining Wine Service at Opus 5 Restaurant in Boca Raton
While Opus 5 is revered for serving delicious, inventive American cuisine
with Asian accents, this popular Boca Raton restaurant is also well-known
for its fine dining wine service. The Opus 5 wine list was called “distinguished”

Beverage Manager/Sommelier Zach Smith always matches the perfect wine to
every course.
A wine connoisseur and a dedicated sommelier, Smith has held positions in
the hospitality industry for the past thirty years. He spent half a year
creating the noteworthy fine dining wine service at Opus 5. Featuring approximately
150 wonderful wines, from around the world, Smith’s service includes wines
from some small boutique California wineries, such as Vine Cliff Winery and
Loring Wine Company in Santa Lucia Highlands, Newton Winery in the Napa Valley,
and DuMol Vineyards in the Russian River Valley. In addition to California
offerings, this outstanding fine dining wine service also features wines
from France, Italy, Spain, Argentina, Australia, New Zealand, South Africa,
Chile, Portugal, Canada, and Germany. The Opus 5 wine list is broken down
geographically and lightest to fullest: Champagnes and Sparkling Wines, Lighter
International Whites, Richer International Whites, Lighter American Whites,
Richer American Whites, French Reds, Spanish and Italian Reds, Southern Hemisphere
Reds, American Cabernet Sauvignon and Blends, American Merlot, American Pinot
Noir, and American Alternative Reds.
Smith notes, “There are also over two dozen wines, by the glass, that emphasize
bright, clean flavors that perfectly complement Chef John Belleme’s precise
cuisine.”
The four-page wine list offers a diverse selection of distinctive wines,
including some hard-to-find labels from North and South America, the Old
World, and the New World.
The Opus 5 wine list also contains plenty of special occasion wine bottles
and superb Champagnes such as Krug Brut 1990 Champagne, from France; Dom
Perignon 1998, from France; Gosset Grand Rose Champagne, from France; Alex
Gambal Chassagne-Montrachet La Maltroie Premier Cru (a deluxe chardonnay
from France); Rudd Estate Sauvignon Blanc from the Napa Valley; Kistler Chardonnay
from California’s Sonoma Coast; Gaja Magari, a Super Tuscan from Italy; Henry’s
Drive Shiraz, from Australia; and Spottswoode Cabernet, from the Napa Valley.
There are also premium dessert wines such as Inniskillin Vidal Ice Wine,
from Canada, and Sandeman’s 20-year Tawny Port and Warre’s 1985 Vintage Port,
both from Portugal.
This Boca Raton restaurant offers a wide range of prices to suit every diner.
Wines by the bottle range from $24, for Beringer White Zinfandel from California,
to $440, for the Krug Brut 1990 Champagne from France. Wines by the glass
range in price from $6.50 to $17.
During the summer of 2007, Opus 5 is offering a special Half-Price Wine
List, with 16–18 wines which change weekly. The fine dining wine list features
bottles ranging from $18–$220. Additionally, diners who own special bottles
of wine are encouraged to bring them to Opus 5, and enjoy them with their
meals, throughout the year. There is a $25 corkage fee, per bottle.
