RECIPE CORNER: BACON & CARAMELIZED ONION MAC ’N’ CHEESE

Everyone has their favorite baked mac and cheese recipe… and this is ours.  Burt & Max's uses a combination of cheeses melted into a rich and creamy cheese sauce, for the ultimate cheesy deliciousness! Burt & Max’s Mac n’ Cheese was created by our corporate Culinary Director, Chef Patrick Broadhead.


INGREDIENTS: 

2 1/2 tablespoons unsalted butter

1 medium shallot, minced

1 thyme sprig

2 cloves garlic, minced

2 tablespoons all-purpose flour

2 ½ ounces white wine

2 cups heavy cream

2 cups half and half

6 ounces grated mozzarella

6 ounces grated provolone

6 ounces grated Parmesan

2 pounds cooked campanelle, cooked according to package directions, or pasta of your choice

1/2 cup toasted breadcrumbs

Salt and black pepper, to taste


DIRECTIONS: 

1. Using a large saucepan over medium heat, heat the butter. Saute shallots, thyme, and garlic until lightly caramelized, about 5 minutes. Season with salt and pepper, to taste.

2. Add the flour and cook for 4 minutes on low heat, stirring with a wooden spoon. Gradually whisk in the white wine, heavy cream and half and half to incorporate. Cook over medium heat, stirring often until slightly thickened and the taste of flour cooks out of the roux, about 10-15 minutes.

3. Add cheese and stir until melted. Add pasta and cook until heated through, tossing gently to combine.

4. Transfer to a serving dish and top with breadcrumbs and bits of crispy bacon.
